Alaskan King Crab Legs!

1. Boil a pot of water, add crabs and boil for 5 mins.

2. While that’s boiling, chop some fresh tomatoes, cucumbers and red onions, toss with a vinaigrette and you’ve got a delicious wonderful, summertime dinner in less than 20 minutes.

3. Melt butter in the microwave right before you sit down to eat.

Voila! Throw them on a huge platter with the melted butter and a big bowl of salad and let everyone help themselves!

The best part of this meal is that while it only takes 20 minutes to get it on the table, it takes at least 30 minutes for kids to finish these! Plus, they LOVED the experience!

My 5 year old thought it was like eating a dinosaur!

Desperate Times Call for Desperate Actions: How to Stop a 5 year Old’s Temper Tantrum!

After a long and difficult day at Kindergarten ;) my 5 year old refused to eat dinner. He also refused to stop screaming and crying, even when I gave him the iPad.

The Chilean sea bass with onions and marinara did NOT improve the situation. It was like having a wailing fire truck inside your kitchen.

Fortunately, the month of May abounds with birthdays in our family, so I had a birthday cake in the freezer!

This is the one and only leftover my kids will gladly eat!

So, tell me: what would you have done?!

The Original Wat Chu Wan Wonton - Full Tray

I went to a party last night and my friend, Kristine Marrale, Co-owner and Founder of WatChuWanWonton, brought a tray of her Original Wontons.

Holy Cow! They were amazing, tiny, crunchy and delicious and the dip is phenomenal also! Plus, she’ll deliver!!

It just reminded me of this point: No matter how much I love to cook, there are some really talented people out there who can make things far better than I!

Kristine Marrale and her WatChuWanWontons are a prime example. Also, it’s nice to take a little pressure off yourself by having some dishes that will be a surefire hit and will save time. And we all know I’m all about saving time.

Great Traveling Tip for the Perpetually Chilly!

My sister Patty has the good fortune to have a career that takes her all over the world!

She is one of the women, like  myself, who is always a little cold. That is no fun when you’re on a flight for hours and there’s no relief in sight.

I usually carry a big carryon with a cashmere pashmina and a neck pillow, but it’s obviously heavy and limits me.

Patty gave me a great idea: Leggings!

She wears a knit dress and tightly rolls a pair of leggings into her carry-on (large handbag) and voila! She’s toasty!

A Perfect Cake for Easter

With Easter around the corner, deciding what to bake for desert can be a difficult decision. I’ve realized over the years that a pound cake is probably your best bet. It’s simple to make, can store for a few days prior to baking and it’s a treat most people can’t resist.

This is a recipe for a special kind of pound cake called the Mockingbird Cake.

There are many great pound cake recipes out there, but I find this one superior for these reasons:

1. You can bake it up to three days ahead. Just wrap and store at room temperature.

2. You can easily double this recipe and make two!

3.  Have a loved one in another State? That’s okay because it ships flawlessly.

4. You can add any topping you like. My family is big on chocolate so adding a coating of chocolate cream always makes my family happy.

4. It’s delicious!

Ingredients:

Makes 1 Large Cake

1 C. (2 sticks) unsalted butter, room temp

1 8-ounce package  of 1/3 reduced fat cream cheese, room temp

3 C. sugar

1 tsp. salt

6 large eggs

4 tsp. vanilla extract

3 C. all purpose flour, sifted. If you would like a healthier alternative, don’t be afraid to use another form of flour such as Spelt or Almond

Directions:

Place butter and cream cheese in a 12-cup Bundt pan. Using electric mixer, beat butter and cream cheese in large bowl until fluffy, about 4 minutes.

Add sugar and salt; beat 10 minutes, occasionally scraping down sides of bowl.

Add eggs one at a time, beating until blended after each addition.

Beat in vanilla.

Beat in Flour at low speed until batter is smooth (do not overbeat, it will make the cake TOUGH).

Transfer your batter to the pan.

Place pan in cold oven and then set temperature to 200 degrees (F) and bake for 20 minutes.

Increase temperature to 250 and bake for 20 minutes.

Increase temperature to 275 and bake for 10 minutes.

Increase temperature once more to 300 and bake for one hour or until toothpick comes out clean.

Turn cake over onto a cooling rack and cool completely.

If you plan on adding a topping, do so after the cake is cooled. You don’t want your topping to melt off the cake! I made two last year and instead of adding anything on top, I presented my cakes with a beautiful ribbon. Don’t be afraid to showcase your work! I like to think of my baking as art.

Day 15-20 Hurry Up and Wait

This whole process has been so fluid, I can not complain.

However, this is how it goes.

After the tile is laid and the shower is installed, they measure the spaces where the vanity, the linen closet and the shower door will go.

This really can not be done ahead of time because if they are wrong, they will either look sloppy or will simply, not fit.

Margali and Flynn is  known for their meticulous finished product and this is why. There are no shortcuts. Everything must be done properly and perfectly.

So, they measure, order the units to be made and we wait to have them installed.

In the meantime, the contractor is building a bench with a built-in toy cabinet in our playroom!

This bathroom renovation was extremely quick, which was ironic because there were several broken pipes and this bathroom was really a mess!

Bathroom Reno-Day 10-Time to Tile!

Tiling a bathroom  is quite a process. It is truly a combination of science and art that requires a lot of patience and  focus. In short, it requires a true artisan.

Margali and Flynn has a fabulous, gifted gentleman who does this with tremendous precision, care and passion.

In the past, he has worked here well past quitting time, until almost 8pm, to satisfy his own standards.  And he’s always been so friendly to my kids who, naturally want to “help”. And he LETS them! What a bonus!

    Locker Room Chaos to Organized Sports Gear

    So helpful – A NYC Must Have!

    My friend told me about the Legacy Sport Trunk tote and I bought one a few weeks ago. Living in NYC with two kids, I use it on the weekends when I drive out to my in-laws. One section for each child and one for me. With everything stable in the back of our SUV, I can hear my kids talking to me rather than having stuff roll around the trunk for the whole ride. I can then take the tote out of the car and bring it right into the house. This product makes my life so much more organized and at a great price point given the quality.

    I originally bought this tote to try and make my after-school routine a little less crazy. But the best part is not having to clear away all the crumbs, dirt, wrappers, and other “extras” that found their way into the back of the car.     High Marks for a Terrific Teacher’s Aid

    The Legacy Sport Home & Trunk Organizer is a fabulous aid for an elementary school teacher who is constantly bringing materials to school to share with students.     Time to get organized!

    I love the Legacy Tote for my car because I keep one section with my auto supplies, such as, car cables, snow scraper and shovel, the second with my gym and tennis gear, and the third with my dry cleaning bag and store returns so I can have these items when I find time to stop. They don’t get thrown around and dirty. Also I can just take the tote out of my trunk and not have to search for loose items when I go to the car wash. What a time saver!     My family really likes the trunk tote by legacy sport. Our kids play a myriad of sports. It keeps the car clean and keeps everything exactly where I placed it. I’ve tried cheaper renditions, but you get what you pay for. Buy it. You will glad you did.
