Soup is a great option that my family loves for dinner. It’s quick to make, hot, healthy and light and I always serve it with hot garlic bread!
Plus, it’s another wonderful meal that you can make when you have a quiet hour during the weekend and then pull it out for a quick dinner during the week.
This is the best Vegetable Soup recipe I’ve ever tried and it’s from Cooks.com. Try it and I think it will quickly become your favorite!
Simmer for half an hour, or until vegetables are tender.
Stir in pureed tomatoes, peas or corn, lima beans, and/or greens.
Note: If using quick-cooking barley, it can be added now along with small pasta. If using regular dry barley, cook it separately until tender.
Simmer for another 15-20 minutes before serving.
Serve with grated Parmesan cheese.
Variations: Any kind of vegetable that you prefer can be substituted. 1-2 cups of shredded cooked beef or ham may be added during the last 15 minutes.
