It’s January in NY, which means it’s cold and wet, so I want to make something very healthy, hearty and satisfying. But, it’s also post-holiday, so I want to keep it as low fat as possible.
Pasta Primavera is the perfect solution in my house.This is one of my favorite wintertime dishes! I love it because of all of the vegetables I’m giving my family, and because it’s quick and easy to make. My kids love anything with pasta, so it’s a win-win for everyone!
Pasta Primavera
Cook Pasta as directed, adding 1 T. olive oil and a pinch of salt as it’s cooking. Drain and coat with 1 C. Marinara Sauce and cover.
Primavera:
2 T. Oil
2 T. Onion
1 Garlic clove, minced
Approximately 4 Cups chopped vegetables: 2 Carrots, 2 Peppers,1 bunch Broccoli heads, Asparagus tips, Zucchini and Squash (or whatever vegetables you choose, but these work well).
Marinara Sauce
Heat 2 T. olive oil in a deep saute pan, add carrots and cook for about 10 mins, adding water or chicken broth to sauté-steam as you cook. Remove carrots to bowl. Add Peppers and cook for 5-6 mins, add Broccoli and Asparagus, adding water or chicken broth to sauté-steam and cook for another 3 mins. Remove to the bowl with carrots. Add Zucchini and Squash and sauté for 5-8 minutes. Remove to bowl with vegetables. Add onion and garlic and saute for 2-3 minutes, or until translucent. Add back ALL of the vegetables and top with marinara sauce and cook until uniformly heated through, about 5 more mins.
Add Marinara and cook until heated through and serve over pasta.
